I keep crashing my plane running through the canyons on way to Bagdad. Need to skip this level.

It is quite a tricky place yes, took me a few runs to learn the route and know where what collapses. If you figure that out + using air brakes a LOT, it should go smoothly.
Other then that, find a save game that already has is saved behond that and continue playing on.
