"Is Option 1 supposed to give infinite health to enemies as well?"
Sometimes it locks an enemy's health at 99 like the PCs, I had an epic standoff with a honey badger until I realised. Although on reloading the save it didn't happen again.
Save often.

Can anybody confirm or deny the trainer’s and/or editor’s compatibility with GOG’s version? I haven’t yet purchased the game so. . .

I haven't used the trainer yet , but the editor works just fine with the GOG version.

I get the same problems as a few others with the trainer. When using the "Never over encumbered" option, I'll hear "trainer activated", then an error pops up: "Couldn't find game code". When I click OK, it says "trainer activated" again. I have a characters inventory open when attempting to activate the option. I've tried with other characters and still get the same problem. The other options seem to work pretty well. The only one that I can't get to work is the "Never over encumbered" option.
Edit: I think I got it to work. It wasn't working at the beginning of the game, but after I got into the first fight at the radio tower, I got the two trainer activated sounds and the option activated. Woohoo!

Because the function of your encumbered status is called/created in a fight as well (to check your movement status). Weird that it isn't by opening the inventory for you.

As it seems yes. As I said several times the game creates code on the fly. That means the game creates the code when its needed. And the game checks the encumbered status in a fight to set your movement. It also checks the status when opening the inventory but that doesn't seem to be the case for some users.
