Throwing knives are bugged in the PC version. You cannot re-select them.

You get the knives from the guys on the rooftops that aren't snipers and off most of the ships (the guys without hats). They carry them around as their primary weapon.
To reselect knives, you have to just cycle through your menu list until you get to them. this is easiest with a gamepad (pressing left on the gamepad cross several times will get you to the throwing knives again).
The problem is: Keeping them selected when you have more than 1.
And no. They aren't glitched in the PC version and yes, you can loot them throughout the game, even on various islands.

... how odd that I cannot "loot" those knives even when I have the trainer turned off.
The throwing knifes are bugged on the pc version. We do not have the "weapon wheel" like consoles do and if the knife isn't thrown immediately prior to selecting another weapon, one cannot re-loot/steal a knife again.
Hence, they are bugged and non-selectable.
This user just posted a possible solution to the problem on the ubi boards. Perhaps it might solve the problem.Link
