I'm replaying a third time now, 100% on everything so far up to Sequence 7 and managing to complete the Encylopedia of Man so as soon as that's done, I shall be challenging the priest once more at the end, bowls and 9 Mens Morris are relatively easy but I'll probably go to my death bed cursing the designers of AC3 making this damned game an achievement!!!! Still, it will be an achievement if I manage I guess so they've done what they set out.....now where's my sedation pills?!?!?

Honestly I think the mini games in Red Dead Redemption were heard than the one in here. Especially the knife one.
guys, i'm so glad i'm not the only one unable to beat the fanorama game.
And Dab, I think chess seems more logical to me than this game - would have preferred that instead as well, just like fullmetal said.
As Blade stated before it seems pure luck to succeed. I have tried maybe 20 times but as soon as I think I'm ahead my opponent magically takes 6 pieces in a row and I'm done.
@Blade I have completed the Encyclopedia by pure luck but have gotten several bugs regarding other states of completion which I will not go into cuz I have described those on the ubi forum instead and have gotten zero replies (delivery requests disappearing although finished etc). Link
Shame cuz I really enjoyed this game a lot, took me 10 hours of gameplay but it's been a lot of fun.

As for the Encyclopedia, get to Sequence 11 (and make sure you have done all their side quests and are fully upgraded), start a day from morning in the valley and go around seeing the people.
Remember you can eagle eye the ones that you can scan, people forget about this and just try to focus on them without knowing.
Don't even try the priest, the amount of people who complained on official forums etc about not able to get the priest in the encyclopedia was funny. Since he wasn't an entry.
So continue to do this through out the day and you will get them all.

I've done it!!!!!! The only things left on the achievements now are the multiplayer and as I only have a 768kb connection they can wait until I get fibre broadband.....I'm now trying to re-invigorate the use of Fanorama in pubs local to me because I am such a bl**dy expert!!! God my brain hurts, thanks to everyone for the advice and help.... now to wait for Black Flag and whatever fiendish plots and sub-games they have in store for us then
