My Shep has 900 health. Never been killed by anything with the Health option on, even by Grenades exploding in my face when I didn't notice the icon.
That's on hard.

Unlimited health only sets it so that your health doesn't drop. As far as I know though, the max health the game will allow (short of editing) is like 825. At higher difficulties, abilities and weapons can do over 1400 damage.
So even with the trainer, you can die. It just prevents you from dying to small arms fire. But if you let a sniper shoot you in the head or hug a grenade, then that's on you.
If the trainer prevents health from dropping, then the damage amount shouldn't matter, no? because the health value doesn't drop...

Technically yes. But if the Damage registered is higher than the health registered. The game AI will still see it as you dieing. There for kill ya. Since there is no if factor in the game for the AI to read through your still gona go brown bread.

Still gonna point out that I've had grenades blow up in my face and not die.

Based on evrything that has been said the reason grenades do not kill me is because I am playing on the easiest setting.
