Does anyone know of a way to get all the enchanting options via the console?
I tried psb and that didn't work.
I also tried going to the dev room and getting all the enchanted weapons/armor from the chest but my computer can't handle it.

Hey there mate! Ok so listen up, use the player.additem console command to add yourself one of each category of these weapons. These seem to be the only ones that can be enchanted, so far.
You just add yourself one of each, disenchant it and presto, you'll have all your enchantments. You can also use the wiki to help you out on all sorts of stuff.
