is it possible in the console to bind a command like ex. unlock to a key? so if i walk up to a locked door i can just hit the key and unlock it? if so is it normal bind as in bind (key) "unlock" or something else?

No. You can't bind any key to a console command. Using FOSE, though, well that's another story.

I don't know much about keybinding in the Gamebryo engine, but you could probably use a script to activate a console command when you press a certain button using FOSE. I don't know much about it, so you might want to go ask the folks over at fallout3nexus.
